Hello world! You may call me “L” and this is my blog! I am working in the marketing field full-time, while pursuing a Masters of Professional Writing through Chatham University on a part-time basis. Right now, I am enrolled in a technical writing and editing class. As part of the class, we have to write a final paper on a topic of interest. I have been intrigued by vegetarianism for quite some time now. Thus, I decided to make vegetarianism my final project topic. I will be researching the history of vegetarianism, the different types of vegetarians and vegetarianism’s social, economical, moral and political significance. In addition, I will be keeping a food journal of my vegetarian eats as well as creating an instruction manual on how to prepare each recipe. So, here goes my 3-week challenge: to eat and live like a vegetarian!
I decided to pursue vegetarianism for a few reason. First, it seems really interesting! Second, I said I would and now I am finally doing it! Third, I wish to live a healthier lifestyle. I’m not going to life, I’m cute, but I could stand to lose about 44 lbs. In addition, my body mass index is at 31 and it should be at 24. Also, I need to make sure I keep my blood sugar at a normal number. About a year ago, I had “abnormal” blood sugar (between normal and diabetes). Now, my blood sugar is back to where it needs to be. Even so, I need to make sure it stays there. I have a relative who lives with Diabetes. I don’t think I could stick a needle in myself everyday and I know I couldn’t give up some of my favorite foods.
According to the research I’ve done, a vegetarian diet helps lower your body mass index to a normal rate, reduces your risk for heart disease, reduces your risk for diabetes and lowers your cholesterol. This is great news!
So, here I go with my vegetarian experiment; onto a healthier lifestyle!
Today’s Food Journal:
Breakfast: 1 small cup of 2% Reduced Fat Vitamin D Milk
Lunch: 1 Chicken Quesadilla (Chicken, Cheese, Black Beans, Rice)
1 Glass of Mango Juice
Dinner: 2 slices of Radicchio Pizza (taken from Alicia Silverstone’s Book, The Kind Life)
Dessert: 1 Chocolate Bar from France
Snack: 1 Cup of Mango Juice
2 Cups of Silk Vanilla Soy Milk
